It is not ice, it's a disturbed supersaturated solution recrystalizing. It will not melt. This is incredibly misleading and causing people to have no idea how chemistry actually works. Embarassing.

This isn't ice. By boiling and dissolving a large amount of NaCH3COO you are producing a saturated solution. When the solution cools the solution becomes super saturated, a very tempermental form. Essentially there is more moles of solute dissolved in the water than it can handle. The slightest disturbance causes the dissolved solute particles to crystalize rapidly as the Sodium rejoins with the Acetate ion. The result is a solid crystal, not "ice" which is frozen water.
